Strawberry Cucumber Salad

This Strawberry Cucumber Salad is crunchy, bright, refreshing, and juicy in every bite! Cucumbers are layered with massaged kale, basil, mint, and sliced strawberries, then finished with balsamic glaze. It's an unforgettable salad for the spring and summer!

Ingredients

  • 1 cup kale thinly sliced, chopped
  • 2 cucumber sliced (round, English
  • 1 pint strawberry sliced, fresh
  • 1/2 red onion thinly sliced, small
  • 1/4 cup feta cheese freshly crumbled
  • 1/4 cup basil freshly chopped
  • 1/4 cup mint freshly chopped

Simple dressing:

  • 3 tablespoon olive oil
  • 2 tablespoon balsamic glaze
  • salt to taste
  • black pepper to taste

Instructions

  1. Massage chopped kale with olive oil between fingers. Transfer to serving bowl.
  2. Mix together dressing ingredients in small bowl and set aside.
  3. Add all ingredients to serving dish and pour on dressing, gently tossing to combine. Garnish with more feta, fresh herbs, and balsamic glaze before serving. 

Notes

  • HOMEMADE BALSAMIC REDUCTION - in small saucepan over medium-high heat, bring 1 cup balsamic vinegar with 1 tablespoon of honey or maple syrup* to a boil. Option to omit sweetener. Reduce to simmer for 10-15 minutes, until balsamic has reduced to half and coats back of spoon. Store in jar in fridge about 3-4 weeks.
  • STORAGE - recipe can be easily prepped the day before. Store in covered container in fridge until ready to serve.
