Strawberry Freezer Jam
Description
Strawberry Freezer Jam combines ripe strawberries, sugar, and a special freezer jam pectin to create a quick-setting preserve that requires no boiling. The strawberries are first washed, finely diced, and partially crushed to release their juices, providing a fresh fruit base. Incorporating orange zest adds a mild citrus aroma, enhancing the natural berry flavor.
The jam thickens after mixing in the pectin and resting briefly, relying on the specially formulated freezer jam pectin that works at cold temperatures. This yields a sweet, lightly textured jam suitable for refrigeration or freezing. The recipe advises against doubling the batch to ensure proper setting and suggests adjustments in berry chunkiness to personal preference.
This jam pairs well with breakfast breads or as a topping for desserts. Because it is not cooked, the fruit's fresh flavor is prominent. Proper storage in the refrigerator keeps it good for about two weeks, while freezing can extend shelf life for up to a year. Thawing in the fridge before use preserves texture and quality.
Using the appropriate freezer jam pectin is critical since regular pectin products will not set the jam properly. The method emphasizes gentle stirring times to integrate ingredients and develop the desired consistency.
Ingredients
- 4 cups strawberries about 2 lbs
- 1 teaspoon orange zest optional
- 1 ½ cups granulated sugar
- freezer jam pectin (you can find this at Walmart or Target or online)
Instructions
- Wash the strawberries and finely dice. Use a masher to slightly crush some of the berries until you have 4 cups of berries total.
- Zest 1 teaspoon of zest from the 1 orange if desired. Add to the strawberries along with the sugar. Mix well and rest for 10 minutes.
- Stir in the pectin, a little at a time, until incorporated. Continue gently stirring for 4 minutes with a spoon.
- Let rest for 2 minutes. Stir for 2 minutes more.
- Pour into freezer jam jars or glass jars.
Notes
- Use a freezer jam-specific pectin to ensure the jam sets properly without cooking.
- Prepare only the amount you plan to consume or freeze separately; do not double the recipe in one batch.
- Adjust the strawberry texture by crushing more or fewer berries according to preference.
- Store jam in the refrigerator for up to two weeks or freeze in suitable containers for up to one year.
- Thaw frozen jam slowly in the refrigerator before using to maintain quality.
