Strawberry Quinoa Salad
Description
This cold salad features quinoa cooked and cooled to a light, fluffy texture as the base. Fresh chopped cucumbers provide crispness, while diced strawberries add sweetness and juiciness. Crumbled feta contributes a salty and creamy element balanced by crunchy sliced almonds and aromatic fresh mint. A dressing of extra virgin olive oil and white balsamic vinegar dressed with a pinch of coarse sea salt ties the ingredients together with a gentle tang and richness.
The salad is mixed thoroughly to distribute flavors evenly and served chilled or at room temperature. The contrast between the nutty quinoa, fresh produce, tangy cheese, and vinaigrette makes each bite lively and balanced. This recipe offers a nutritious option with a variety of flavors and colors suitable for warm weather or as a side dish.
