Strawberry raspberry jam combines fresh strawberries and ripe raspberries cooked with sugar and lemon juice into a thick, spreadable preserve. Description

This jam is made by gently heating diced strawberries and raspberries with sugar and lemon juice, which helps preserve the fruit and enhance its natural flavor. As the mixture simmers, stirring breaks down the fruit and encourages evaporation, concentrating the sugars and thickening the jam. A sign of readiness is when a spoonful taken out shows slow closing behind the spoon.

Once cooked, the jam is skimmed to remove foam and poured into sterilized jars while still hot, ensuring safe preserving. The final product has a vibrant color and a balance of sweet and tart, with a hint of vanilla if used.

The produced quantity is just under 1 cup, making it suitable for small-batch cooking and gifting. The jam complements bread, pastries, or can be used as a topping for desserts.

Ingredients

  • 250 g strawberries
  • 125 g raspberry
  • 100 g sugar
  • 15 ml lemon juice
  • ¼ teaspoon vanilla extract (optional)

Instructions

  1. Hull the strawberries and roughly dice. Put all of the ingredients in a small-medium saucepan and put on a medium heat. Stir as it heats to dissolve the sugar and break up the fruit a little as they soften. As it cooks, prepare your jar/jars - either warm in a low over a few minutes or submerge in boiling water to sterilize. Take care using tongs/gloves to handle as you remove.
  2. Bring the jam to a simmer, reduce the heat a little and simmer for approximately 15 minutes (or longer, as needed), stirring occasionally. It should become darker in color and thicker - when you stir a spoon through, it will take a bit longer to close in behind.
  3. Remove the pan from the heat, allow to cool a minute or two then skim off any foam. Transfer to your prepared clean jar(s) and put lid on while still hot. Leave to cool. 

Notes

  • This recipe yields just under one cup (~236g), ideal for small uses or gifts.
