Description

  • 2 tablespoons red wine vinegar
  • 2 tablespoons granulated sugar
  • ½ teaspoon Dijon mustard
  • teaspoon salt
  • ½ cup vegetable oil
  • ½ cup strawberries
  • ½ teaspoon poppy seeds

Instructions

  1. Combine vinegar, sugar, mustard, & salt in a blender and pulse to mix.
  2. With blender running on low, drizzle in vegetable oil until thickened.
  3. Add strawberries and blend until smooth.
  4. Drain the mixture through a fine strainer if desired. Stir in poppy seeds.

Notes

  • Use a mild vegetable oil to keep the dressing's fresh strawberry flavor prominent.
  • This dressing pairs particularly well with spinach or arugula salads.
