Strawberry Salad Dressing
Description
The Strawberry Salad Dressing uses a combination of red wine vinegar, sugar, Dijon mustard, and salt blended first to create a balanced acidic and slightly sweet base. Vegetable oil is slowly incorporated to achieve a thickened, emulsified consistency. Fresh strawberries are blended in to give a natural fruity sweetness and smooth texture. Optional straining can refine the texture further.
Poppy seeds stir in last add delicate crunch and an extra layer of mild flavor. The dressing is light and does not overpower the fresh flavors of salad greens, making it especially suitable for spinach or arugula-based salads.
Using a light-flavored oil maintains the delicate taste of strawberry. This dressing can be prepared ahead and refrigerated but is best used fresh to preserve the vibrant fruit notes.
Ingredients
- 2 tablespoons red wine vinegar
- 2 tablespoons granulated sugar
- ½ teaspoon Dijon mustard
- ⅛ teaspoon salt
- ½ cup vegetable oil
- ½ cup strawberries
- ½ teaspoon poppy seeds
Instructions
- Combine vinegar, sugar, mustard, & salt in a blender and pulse to mix.
- With blender running on low, drizzle in vegetable oil until thickened.
- Add strawberries and blend until smooth.
- Drain the mixture through a fine strainer if desired. Stir in poppy seeds.
Notes
- Use a mild vegetable oil to keep the dressing's fresh strawberry flavor prominent.
- This dressing pairs particularly well with spinach or arugula salads.
