  • 1 red onion sliced
  • 1 cup radish sliced into rounds
  • 2 cups strawberries sliced
  • 1 avocado sliced or cut into chunks
  • 2 cups cherry tomato cut in half
  • 1/4 cup pine nuts
  • 1/2 cup feta cheese crumbled

Dressing:

  • 1/4 cup extra-virgin olive oil
  • 1 teaspoon grape vinegar
  • 1/2 lemon juiced
  • 1 teaspoon lemon zest
  • 2 cloves garlic minced
  • 1/4 teaspoon oregano
  • 1/2 teaspoon poppy seeds
  • salt to taste, freshly ground
  • black pepper to taste, freshly ground

Instructions

  1. Combine Dressing ingredients in a small bowl or measuring cup and whisk with a fork to combine.
  2. Combine all salad ingredients in a large bowl.
  3. Add dressing and toss to combine. Top with lots of crumbled feta cheese and serve.
