Strawberry Syrup
Description
This strawberry syrup recipe uses hulled and chopped strawberries cooked slowly with sugar, water, and vanilla extract until the fruit breaks down and releases natural flavors. Straining through a fine mesh ensures the syrup has no pulp, achieving a smooth consistency. The syrup captures the fresh sweetness of ripe or overripe strawberries, enhanced by the warm notes of vanilla.
The syrup can be added to drinks, pancakes, or desserts, providing a natural fruit sweetness without artificial ingredients. Simmering carefully prevents burning and retains strawberry essence. Proper cooling before bottling prevents burns and helps preserve shelf life.
Using fully thawed frozen berries is acceptable, and variations including added lemon extract, fresh herbs like basil, or warm spices such as cinnamon or ginger can tailor the flavor profile. Refrigeration extends freshness, and sanitized containers prevent spoilage. Freezing is not advised as it alters syrup quality upon thawing.
Ingredients
- 2 cups strawberries hulled and chopped
- 1 cup granulated sugar white, 200g
- ¾ cup water
- 1 teaspoon vanilla extract
Instructions
- Add all ingredients to a pot. Stir it together, bring to the boil, then reduce the heat and simmer for 10 minutes, until the strawberries break down.
- Place a fine mesh strainer over a bowl or jug and pour in the mixture. Press the strawberries into the strainer to extract as much strawberry syrup as possible.
- Allow the mixture to cool, then pour into a jar or bottle and keep in the fridge for up to 2 weeks.
Notes
- Allow the syrup to cool completely before transferring to containers to avoid burns and preserve quality.
- Use ripe or overripe strawberries for the best natural flavor and sweetness.
- Frozen strawberries can be used if fully thawed prior to cooking.
- Sanitize storage jars or bottles to extend shelf life.
- Variations include adding lemon extract, fresh basil, cinnamon, or dried ginger for different flavor nuances.
- Store syrup refrigerated for up to 2 weeks; freezing is not recommended due to flavor changes.
