Strawberry Valentine's Snack Mix
Description
The Strawberry Valentine's Snack Mix features a combination of chewy and crisp textures from the rice Chex and mini pretzels. The white chocolate is carefully melted with coconut oil, then blended with strawberry gelatin powder to create a smooth, fruity coating. Tossing the mix quickly ensures an even layer on every piece, which then hardens as it cools on parchment. Incorporating M&M's adds bursts of chocolate and color, complementing the strawberry flavor and salty crunch. This treats works well as a shareable snack or festive addition to any party table.
The coating process requires attention to avoid overheating the white chocolate, and using refined coconut oil prevents an overt coconut taste. After cooling, the mix can be stored in an airtight container at room temperature for up to one week, maintaining its texture and flavor. It's best enjoyed fresh for the contrast of crispness and smooth coating.
