Strawberry Vinaigrette
Description
The Strawberry Vinaigrette combines ripe strawberries, red wine vinegar, honey or sugar, dried mustard, and olive oil, blended smoothly to form a creamy, fruit-forward dressing. Starting the blend with strawberries, vinegar, sweetener, and mustard, then slowly adding oil, ensures a well-emulsified texture. Adjusting seasoning with salt and fresh pepper rounds out the flavor. The sweetness can be customized according to taste using honey or sugar.
This vinaigrette offers a fresh, tangy component for salads, especially those with greens, nuts, or cheeses that pair well with the sweetness of strawberries. It can be refrigerated for up to 4 days and shaken before use. Its bright red color and fruit flavor make it visually appealing and seasonally appropriate when fresh strawberries are available.
Using frozen strawberries is an option when fresh are not in season, simply thawing them before blending. The recipe suggests using lighter olive oils or neutral-flavored oils to let the strawberry flavor stand out. Making it ahead by a day or two is possible, with gentle shaking to recombine the dressing before serving.
Ingredients
- 4 ounces strawberries stemmed (see note 1)
- 2 tbsp red wine vinegar
- 2 tbsp honey or sugar, or less to taste (see note 2)
- 1 teaspoon dried mustard
- 1/4 cup olive oil (see note 3)
- salt to taste, freshly ground
- black pepper to taste, freshly ground
Instructions
- In a blender, add strawberries, vinegar, sugar, and dried mustard. Blend until smooth. With the motor running, slowly drizzle in the oil.
- Season to taste with salt (I like /14 teaspoon). You should have about 1 cup dressing (cover and refrigerate until serving time). Use within 4 days.
Notes
- Frozen strawberries can be used by thawing before blending for convenience.
- Start with 1 tablespoon of honey or sugar and adjust sweetness to taste.
- Use light olive oil or neutral oils like vegetable or grapeseed to keep the dressing's flavor balanced.
- Store the vinaigrette covered in the refrigerator for up to 4 days; shake well before using.
- You can prepare the vinaigrette up to 3 days in advance to let flavors meld.
