  • 2 tbsp red wine vinegar
  • 2 tbsp honey or sugar, or less to taste (see note 2)
  • 1 teaspoon dried mustard
  • 1/4 cup olive oil (see note 3)
  • salt to taste, freshly ground
  • black pepper to taste, freshly ground

Instructions

  1. In a blender, add strawberries, vinegar, sugar, and dried mustard. Blend until smooth. With the motor running, slowly drizzle in the oil.
  2. Season to taste with salt (I like /14 teaspoon). You should have about 1 cup dressing (cover and refrigerate until serving time). Use within 4 days.

Notes

  • Frozen strawberries can be used by thawing before blending for convenience.
  • Start with 1 tablespoon of honey or sugar and adjust sweetness to taste.
  • Use light olive oil or neutral oils like vegetable or grapeseed to keep the dressing's flavor balanced.
  • Store the vinaigrette covered in the refrigerator for up to 4 days; shake well before using.
  • You can prepare the vinaigrette up to 3 days in advance to let flavors meld.
