Strawberry Vinaigrette
Description
This Strawberry Vinaigrette combines chopped fresh strawberries with extra virgin olive oil and apple cider vinegar to provide a balance of sweetness and acidity. Granulated sugar helps round out the tartness of the vinegar and strawberry. Once blended until smooth, the dressing is seasoned with salt and black pepper to taste and blended again to integrate the seasoning.
The dressing has a vibrant red color and a thick, smooth consistency, making it an appealing topping for salad greens. Optional chilling allows flavors to meld and provides a cool contrast to warm weather dishes.
Leftover vinaigrette should be stored in an airtight container in the refrigerator and used within 2-3 days to maintain freshness. Always shake well before serving as ingredients may separate.
Ingredients
- 1/3 cup strawberries chopped
- 3 tablespoons extra virgin olive oil
- 1 tablespoon apple cider vinegar
- ¾ teaspoon granulated sugar
- salt to taste
- black pepper to taste
Instructions
- In a blender or food processor, combine all four ingredients.
- Blend until the mixture is smooth and thick.
- Give the dressing a taste, and season with salt and pepper. Blend again until smooth.
- Chill for thirty minutes (optional), then pour on top of a salad.
