Stuffed Avocados (Dairy-Free, Gluten-Free, Whole30)

These Stuffed Avocados combine creamy avocado halves with a chilled tuna salad mix of cucumber, pickles, garlic powder, salt, and mayonnaise. The mixture is light and savory, with crunchy accents from diced pickles and cucumber. The avocados are filled just before serving to keep them fresh and bright, resulting in a cooling and satisfying dish.

Description

Stuffed Avocados consist of avocado halves filled with a seasoned tuna salad made from canned drained tuna, diced cucumber and baby dill pickles, mayonnaise, garlic powder, and sea salt. The tuna is fluffed and combined with the diced vegetables before chilling, allowing flavors to meld. The avocado halves are prepared by cutting in half and removing the pits; the holes may be enlarged slightly to accommodate more tuna filling. The assembled avocados are kept cold until serving to maintain freshness and visual appeal.

This dish offers a creamy texture from the avocado coupled with moist tuna salad that contains tangy, crisp elements from pickles and cucumber. It works well as a light lunch, snack, or appetizer, especially for those seeking grain-free, dairy-free, and Whole30-compliant options.

To prevent avocado browning if serving in advance, the flesh can be rubbed with lemon juice before stuffing. The tuna salad benefits from chilling beforehand, which improves the taste. Quality tuna and mayonnaise impact the final flavor, so choosing carefully is recommended.

Ingredients

Servings
  • 2 tuna water drained, canned
  • 3 inches cucumber diced
  • 4 dill pickles diced, baby size
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt sea salt
  • ¼ cup mayonnaise keto & whole30 approved
  • 5 avocado

Instructions

  1. In a large bowl fluff and break apart the tuna.
  2. Prep the cucumber and pickles. Add them to the tuna.
  3. Add in the seasonings and mayonnaise.
  4. Mix until everything is combined. Chill in the fridge one hour.
  5. Prep your avocados by cutting them in half and removing the pit. If you need to, make the hole where the pit was a bit bigger (just add the extra avocado to the tuna mixture!).
  6. Portion the tuna mixture into the avocado halves. Place the stuffed avocados into the fridge until ready to eat.

Notes

  • Use good-quality canned tuna to enhance the flavor of the stuffed avocados.
  • If making in bulk, an avocado tool helps with halving and pitting.
  • Rub sliced avocado with lemon juice before stuffing to prevent browning and keep the dish fresh looking.
  • The dish tastes best when the tuna salad is chilled before filling the avocados or when finished stuffed avocados are refrigerated briefly.
  • Check the mayonnaise label to ensure it meets Whole30 guidelines or make your own if preferred.
  • A serving size is one whole avocado with tuna filling, containing approximately 6-8 grams net carbs.
