Stuffed Chicken Thighs
Description
Stuffed Chicken Thighs feature boneless, skinless chicken thighs filled with a prepared stuffing mix and wrapped tightly in bacon strips. The chicken is seasoned with garlic powder and paprika, then baked over additional stuffing placed in the baking dish, ensuring the flavors meld during roasting. Baking at 425°F for about 35 minutes results in crisp bacon and tender, fully cooked chicken with an internal temperature of 165°F. The stuffing inside adds moisture and a contrasting texture inside each thigh.
The combination of bacon and seasoning seals in the juices, while the stuffing provides a savory center. This dish serves well as a hearty main course accompanied by sides like steamed vegetables or mashed potatoes. The bacon wrapping adds a smoky note that complements the seasoned chicken and stuffing blend.
The recipe notes recommend ensuring the stuffing is cooled before stuffing the chicken to prevent overcooking the meat. Additional stuffing can be baked beneath the thighs to enhance the dish's flavor. For a variation, boneless chicken breasts can be butterflied and pounded thin before stuffing and wrapping to achieve similar results. Adjust baking times accordingly for different cuts to reach safe internal temperatures.
