Stuffed Dates – 4 Ways

Stuffed Dates are prepared by pitting large Medjool dates and filling them with four distinctive mixtures: ricotta with almonds and shredded coconut, goat cheese with honey and pistachios, cashew butter with cardamom and cacao nibs, and peanut butter with cinnamon and dark chocolate. Each variety offers a unique blend of textures and flavors, combining creamy fillings with crunchy or sweet toppings.

Description

This recipe begins by slicing open Medjool dates to remove pits, creating space for fillings. Four different fillings combine creamy ingredients with a complementary texture or sweetness. Ricotta is paired with shredded coconut and whole raw almonds, goat cheese with honey and crushed pistachios, cashew butter with warm cardamom and crunchy cacao nibs, and peanut butter with cinnamon and chopped dark chocolate.

The dates are filled evenly with each mixture and topped accordingly, producing small, sweet bites that mix creamy, nutty, and fruity qualities. These stuffed dates can be served immediately, combining natural date sweetness with the richness of the fillings.

The dates make a versatile snack or dessert and can be stored at room temperature or refrigerated depending on the filling. Versions containing cheese require refrigeration and may have shorter shelf life. The stuffed dates also freeze well, allowing make-ahead convenience and varied serving options.
