Ingredients
- 1 lb ground beef
- 3 bell peppers mixed colors
- 1/2 cup onion chopped
- 3 tsp garlic minced
- 2 cups riced cauliflower
- 1 1/4 cup marinara sauce
- 1 tsp dried basil
- 1/2 tsp sea salt
- 1/4 tsp ground pepper
- 1/2 cup 3-blend shredded cheese
Instructions
- Preheat the oven to 350°F.
- Wash the bell peppers, cut them in half and remove the membrane and seeds.
- Place the peppers in a baking dish, cut side up and sprinkle with salt and pepper.
- Saute the ground meat in a skillet for about 6-7 minutes until cooked through. Drain the grease and transfer the meat to a bowl.
- Saute the onion, garlic, and riced cauliflower for about 4-5 minutes, until softened.
- Add the marinara sauce, basil, sea salt and ground pepper to the same skillet over medium low heat. Cook, stirring often for about 2 minutes.
- Stir in the ground meat and continue to cook until heated through.
- Stir in 1/2 cup of the shredded cheese.
- Spoon the meat and sauce mixture onto the peppers. Add a small spoonful of marinara sauce and a sprinkle of shredded cheese on top of each pepper half.
- Cover with foil and bake for 30 minutes. Seve and enjoy!
