This recipe seasons 16-20 count shrimp with olive oil and a well-balanced spice blend including smoked paprika, Old Bay seasoning, garlic and onion powders, Italian herbs, and black pepper. The filling combines lump or claw crab meat with cooked chopped spinach and artichoke hearts mixed with mayonnaise, Italian-style breadcrumbs, mozzarella and pepper jack cheeses, minced garlic, Dijon mustard, Worcestershire sauce, lemon juice, and herbs for a flavorful, moist stuffing.

Each butterflied shrimp is filled with the prepared stuffing and placed in a baking dish. Baking at 350°F for 20-25 minutes cooks the shrimp and melts the filling to a golden, cohesive topping. For the shrimp

  • 2 lbs Shrimp deveined and butterflied, 16-20 count
  • 2 teaspoons smoked paprika
  • 1 tbsp olive oil
  • 1 tsp Old Bay seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp Italian seasoning
  • 1/2 tsp black pepper

For the filling

  • 8 oz lump crab meat optional, or claw crab meat
  • 1 cup spinach strained & chopped, cooked
  • 6 oz Artichoke strained & chopped, chopped
  • 1 cup mayonnaise you can also use sour cream or cream cheese
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup breadcrumbs Italian style
  • 8 oz cheese I used mozzarella and pepperjack
  • 1 tbsp garlic minced
  • 1 tsp dried herbs
  • 1 tbsp lemon juice fresh
  • lemon zest

For the Garlic Butter Dill Sauce

  • 4 tbsps butter unsalted
  • 1 tbsps garlic minced
  • 1 tsp dill chopped, fresh

Instructions

  1. Preheat oven to 350 degrees.
  2. Season the deveined, butterflied shrimp with a mix of olive oil, smoked paprika, Old Bay, garlic powder, onion powder, dried herbs, and pepper.
  3. In a separate bowl, create the filling by combining lump or claw crab meat, cooked and strained spinach, chopped artichokes, mayo, breadcrumbs, cheese of choice, minced garlic, garlic powder, dried herbs, and garlic salt.
  4. Fill each butterflied shrimp with the prepared stuffing mixture.
  5. Bake until the shrimp are cooked through, for about 20-25 minutes. Add butter sauce on top for serving.
