Description

The exterior is rubbed with a blend of garlic powder, smoked paprika, black pepper, and salt. The rolled turkey breast is baked at 400°F, cooking until reaching an internal temperature of about 160°F. It is then placed under the broiler briefly to develop a browned, slightly crisp surface.

  • 2.75 -3 pounds turkey breast or turkey breast tenderloins (see note
  • 4 ounces cream cheese softened
  • 1 tablespoon garlic minced
  • cup spinach chopped, fresh
  • cup Bacon see notes for my time-saving tip!, chopped pieces
  • ½ teapsoon salt
  • ½ teaspoon black pepper cracked
  • 1 tablespoon parsley finely chopped
  • 1 teaspoon rosemary finely chopped
  • 1 teaspoon thyme finely chopped
  • 2 tablespoons butter melted
  • 1 tablespoon fresh herbs I used more parsley, rosemary, and thyme, chopped

Spice Rub

  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper cracked
  • ¼ teaspoon salt

Instructions

  1. Preheat oven to 400 degrees and grease a small sheet pan or roasting dish.
  2. Place turkey in a ziploc bag or between two pieces of plastic wrap and pound out to about 1/4-inch thickness.
  3. In a medium bowl combine cream cheese, spinach garlic, bacon, salt, pepper, rosemary, thyme, and parsley.
  4. Spread mixture over the turkey, leaving about 1/2 inch around the edge uncovered.
  5. Gently, but firmly roll the turkey from one long side toward the other. Secure with toothpicks to keep it rolled OR tie with bakers twine and place in prepared baking dish.
  6. Stir the spices together, then rub all over the rolled turkey bundles.
  7. Place this whole stuffed turkey breast in the oven for 15-25 minutes to bake. *Depending on the size of the turkey breast you may need more or less time. Internal temperature (when thermometer is inserted into the thickest part of the turkey) should read about 160 degrees before moving onto the next step.
  8. Switch to BROIL and cook another 5 minutes or so until browned on the outside. (Internal temperature should read about 160 degrees - it will continue to rise a bit to read 165 while resting in the next step.)
  9. Transfer to a cutting board and allow to rest for 5-10 minutes. Stir together melted butter and fresh herbs and brush over the top. Slice and serve immediately - enjoy!

Notes

  • A 5-pound turkey breast serves about 6-8 adults, 7 pounds serves about 8-10.
  • Cooking time varies with the size and thickness of the turkey roll; check internal temperature for doneness.
  • Use microwave-crisped bacon bits to save time without sacrificing flavor or texture.
  • If fresh herbs are unavailable, substitute with 1 teaspoon dried Herbs de Provence or Italian seasoning.
  • Reheat gently in the microwave at 50% power or re-sear slices in a pan to preserve filling texture.
