Stuffing and Turkey Muffins
Description
This recipe creatively repurposes leftover turkey, stuffing, and mashed potatoes into individual muffins. The roughly combined ingredients, bound with egg and optionally enhanced with shredded cheese, are portioned into a greased muffin tin. Baking at high heat develops a crisp top, with cheese browning under a quick broil if desired. The texture balances the softness of mashed potatoes with the denser stuffing and turkey pieces.
These muffins are practical for serving after holiday meals or as an easy comfort food. They pair well with turkey gravy poured on top for added moisture and flavor. The egg binds the ingredients while allowing flexibility in proportions, adapting to available leftovers.
Season the mixture lightly to avoid overpowering the existing flavors in turkey and stuffing. If stuffing feels dry, add a bit of water or chicken stock to improve binding. An ice cream scoop helps portion evenly. Alternatively, bake the mixture in a dish for family-style serving.
Ingredients
- 2 cups turkey leftover, chopped
- 2 cups stuffing leftover
- 4 cups potato mashed leftover
- 1 large egg
- ½ cup cheese to taste, shredded
- turkey gravy leftover or canned
- cooking spray or butter, for greasing
Instructions
- Preheat your oven to 450 degrees.
- Prepare a muffin tin with cooking spray or butter. Set aside.
- In a large bowl combine leftover chopped up turkey, leftover stuffing, leftover mashed potato and egg. You need about ½ of the mixture to be potato and ¼ stuffing and ¼ turkey. Amounts are a rough estimate. Sometimes we have more and sometimes we have less. These muffins are always fabulous. Add shredded cheese if desired. We usually do.
- We usually just use our hands to mix.
- Once blended together, make ball sized portions and place in to each hole in your muffin tin.
- Press a pinch of shredded cheese on top, if desired, and bake for 20 minutes.
- Heat up your gravy.
- Broil for a minute or two before removing from the oven to brown your cheese if desired or required. Serve with gravy. Enjoy!
Notes
- Season the mixture gently to complement the stuffing and turkey rather than overpower them.
- If the mixture is too dry to hold shape, add a splash of water or chicken broth for moisture and binding.
- Use an ice cream scoop to evenly portion the mixture into muffin tins.
- For larger servings, bake in a casserole dish instead of muffin tins.
