Sugar and Spice Candied Nuts

Sugar and Spice Candied Nuts combine walnuts (or similar nuts) with a coating of sugars, cinnamon, salt, and a hint of cayenne pepper for warmth. The nuts are first coated in frothy egg white and water, then tossed with the spiced sugar mix before baking low and slow. The result is a crunchy, sweet, slightly spicy snack that can be enjoyed plain or added to salads and desserts.

Description

This recipe coats nuts such as walnuts, pecans, or cashews with a blend of dark brown and granulated sugars, ground cinnamon, kosher salt, and a pinch of cayenne pepper. The nuts are first coated in an aerated mixture of egg white and water to ensure the sugar mixture adheres evenly.

Baked at 300°F for 30 minutes with occasional stirring, the nuts develop a crunchy, caramelized coating accented with cinnamon’s warmth and a touch of heat from the cayenne. Once cooled and separated, they store well at room temperature or refrigerated for up to a month.

These candied nuts serve as a flavorful snack on their own, toppings for salads, or additions to desserts requiring a crunchy, sweet-spiced element.

Ingredients

Servings
  • cup dark brown sugar
  • cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon kosher salt
  • cayenne pepper heaping pinch
  • 1 egg at room temperature, white
  • 1 tablespoon water
  • 1 pound walnut or a combination, or pecan halves or cashews

Instructions

  1. Preheat oven to 300 degrees F. Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together the sugars, cinnamon, salt and cayenne, making sure there are no lumps.
  3. In a large bowl, whisk the egg white and water until very frothy. Add the nuts, and stir to coat evenly. Sprinkle the nuts with the sugar mixture, and toss until evenly coated.
  4. Spread the nuts in a single layer on the prepared baking sheet. Bake for 30 minutes, stirring twice during baking. Remove from the oven, and stir and separate the nuts as they cool. Once completely cool, the nuts can be stored in an airtight container or glass jars at room temperature or in the refrigerator for up to 1 month.
