Sugar Cookie Icing

Sugar Cookie Icing is a smooth, pipeable frosting made from sifted powdered sugar, milk, light corn syrup, and vanilla extract. The texture can be adjusted by adding milk or powdered sugar and colored with gel food coloring. It hardens to a glossy finish ideal for decorating sugar cookies with clean, bright designs and holds sprinkles well.

Description

This Sugar Cookie Icing recipe mixes powdered sugar with milk and light corn syrup to create a thick but spreadable frosting that becomes firm when dried. Vanilla extract provides flavor, and optional gel food coloring allows different hues without thinning the icing. The consistency is easily adjusted by adding small increments of milk or powdered sugar, achieving a balance that holds piping shapes but isn’t too stiff or runny.

The icing is applied with piping bags and tips to decorate cookies with outlines, fills, or fine details. After decorating, the icing needs time to dry and harden, which can take several hours depending on humidity. Once set, the surface is shiny and resistant to smudging, making it suitable for stacking or storing decorated cookies.

Ingredients

Servings
  • 3 cups powdered sugar sifted
  • 3-4 Tbsp milk whole
  • 2 Tbsp light corn syrup
  • 1/2 tsp vanilla extract use clear vanilla extract if you need the icing to be bright white
  • Gel food coloring optional

Instructions

  1. Combine powdered sugar, 2 Tablespoons of milk, corn syrup, and vanilla extract in a medium-sized bowl and stir until combined. If the frosting is too thick, add more milk, about a teaspoon at a time, until the frosting is thick but pipeable. If you accidentally add too much milk, add powdered sugar until desired texture is reached.
  2. Divide into small bowls and add food coloring (if desired).
  3. Transfer frosting to a piping bag with a piping tip.
  4. Pipe frosting on cookies and decorate with sprinkles/candies, if desired.
  5. Allow frosting to harden before serving, stacking, or storing (will most likely take several hours depending on your climate).
