Sugar Cookie Latte Syrup
Description
This syrup recipe uses coconut milk combined with light brown sugar, gently boiled and then simmered to reduce and thicken the mixture. After cooking, vanilla extract, almond extract, optional butter extract, and salt are whisked in to create a complex flavor reminiscent of sugar cookies. The almond extract is key to replicating the cookie aroma, while the optional butter extract enhances the warm baked taste.
The finished syrup is cooled and stored in a glass jar in the refrigerator. It can be drizzled into coffee drinks to add a sweet, creamy flavor with hints of vanilla and almond. The syrup's coconut milk base can cause it to solidify when chilled but easily loosens when warmed.
Alternative sweeteners such as coconut sugar, dark brown sugar, or white granulated sugar can be used, and sweetened condensed milk can substitute the coconut milk for a different dairy base. This syrup is versatile for homemade flavored coffee drinks or dessert toppings.
Ingredients
- 1 can 14.5oz of coconut milk
- 1 cup light brown sugar
- 2 tsp vanilla extract
- 1/2 tsp almond extract don't skip this!!
- butter extract optional; 1/4 tsp
- 1/2 tsp salt
Instructions
- Pour coconut milk and brown sugar into a sauce pan. Whisk together and bring to a boil. Be careful not to let the mixture boil over
- Reduce the heat to a simmer and simmer uncovered for 15 minutes stirring occasionally. Remove from heat and whisk in the vanilla extract, almond extract, butter extract and salt.
- Allow the mixture to cool completely and transfer to a glass jar with a lid. Store in the fridge and use in your favorite coffee drinks!
Notes
- Store the syrup in an airtight container in the refrigerator for up to two weeks.
- If the syrup solidifies when chilled, warm the container under hot water to re-liquefy it.
- Different sugars such as coconut, dark brown, or white granulated sugar can be used instead of light brown sugar.
- Butter extract adds warmth and baked sugar cookie flavor but is optional.
- For those avoiding coconut milk, use sweetened condensed milk and reduce the sugar by half.
