Description
The dough begins by whisking together dry ingredients to ensure even distribution of leavening agents and salt. Butter and sugar are creamed until well combined, then eggs and vanilla are added to enrich and flavor the mixture. The dry ingredients are gently mixed in to avoid overworking the dough, preserving tenderness. Chilling the dough before baking helps prevent excessive spreading, producing thicker cookies.
Scooping uniform portions allows for even baking; cookies are baked at 350 degrees until edges appear set but centers remain soft, which maintains a tender interior after cooling on wire racks. The result is a classic sugar cookie suitable for decorating or enjoying plain with tea or milk.
Ingredients
- 2 1/2 cups (354g) all-purpose flour (scoop and level to measure, don't spoon and level)
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cups (300g) granulated sugar
- 1 cup (226g) unsalted butter softened
- 1 egg large
- 1 egg large, yolk
- 1 Tbsp vanilla
Instructions
- Preheat oven to 350 degrees. Line baking sheets with parchment paper or silicone liners.
- In a mixing bowl whisk together flour, baking soda, baking powder and salt, set aside.
- In the bowl of an electric stand mixer cream together butter and sugar until well combined.
- Mix in egg, egg yolk and vanilla.
- Add in flour mixture and mix just until combined. If cookie dough seems very soft chill for 1 hour before proceeding so cookies spread less.
- Scoop dough out using a medium cookie scoop (or 1 1/2 Tbsp at a time, and roll into balls if not using a cookie scoop) and drop onto baking sheet, spacing them 2-inches apart.
- Bake in preheated oven 9 - 11 minutes, they should appear slightly under-baked. If baking two batches at once then rotate pans halfway through baking.
- Cool on pan 5 minutes then transfer to a wire rack to cool completely.
- Store cookies in an airtight container.
