Sugar-free Cinnamon Blueberry Sauce
Description
The Sugar-free Cinnamon Blueberry Sauce highlights fresh blueberries cooked down with cinnamon and lemon juice. Using a sugar alternative like Truvia keeps the sauce sweet without traditional sugars. As the blueberries simmer, they release their juices, creating a vibrant, fruity base enhanced by the warm spice of cinnamon. The addition of almond extract at the end adds a delicate nutty undertone that complements the berries.
The sauce’s texture can be controlled by adding a cornstarch slurry, which thickens the mixture to a consistency ideal for drizzling or spreading. It works well as a topping for breakfast items like pancakes or oatmeal, or as an accompaniment to desserts. The absence of sugar makes it suitable for those monitoring sugar intake.
Because the recipe uses fresh ingredients and no preservatives, it's best to store leftovers in the refrigerator and consume within a few days. Stirring occasionally while cooking prevents sticking and helps even thickening.
Ingredients
- 13 ounce blueberries about 3 cups, fresh
- 1/4 cup water
- 2 tablespoons truvia sweetener or another sugar alternative
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice fresh
- 1/2 teaspoon almond extract
Slurry - For Thickening
- 1-2 Tablespoons cornstarch optional
- 1-2 Tablespoons blueberry juice
Instructions
- Place clean blueberries in a medium saucepan with 1/4 cup of water over medium heat. Fold in Truvia, cinnamon and lemon juice. Bring to a boil.
- In a separate small dish whisk together until smooth the berry juice and cornstarch (optional). Add the slurry to the berry mixture and cook until the sauce thickens up (3-4 minutes). Remove from heat and stir in almond extract.
