Sugar-Free Keto Cranberry Sauce

This Sugar-Free Keto Cranberry Sauce combines fresh cranberries with water, stevia glycerite, and vanilla extract to create a tart yet sweet condiment without added sugars. The cooking method gently softens the cranberries so some retain their shape while others burst, providing a pleasing texture contrast. It can be cooled and served as a sugar-free alternative for holiday meals.

Description

The recipe uses fresh cranberries simmered in water sweetened with stevia glycerite, which offers sweetness equivalent to sugar without the added calories. Vanilla extract enhances the flavor complexity. Cooking involves simmering the cranberries until they soften and some burst, ensuring a balance of whole and broken berries in the sauce for texture.

This cranberry sauce is suitable as a keto-friendly side or topping during festive meals or alongside savory dishes requiring a tart accent. It can be stored refrigerated in an airtight container for several days without losing quality.

A tip for maintaining texture is to avoid overcooking so the sauce retains some firmness. If using alternate sweeteners, powdered forms are preferred to avoid crystallization on cooling. The sauce can also be frozen for longer storage.

Ingredients

Servings
  • ¼ cup water
  • 1 tablespoon stevia glycerite equals 1 cup of sugar
  • ½ teaspoon vanilla extract
  • 12 ounces cranberries fresh

Instructions

  1. In a medium saucepan, mix the water with stevia and vanilla extract.
  2. Add the cranberries. Bring to a simmer over medium heat (this should take about 3 minutes).
  3. Lower the heat to medium-low to keep a consistent simmer. Cook, uncovered, stirring occasionally, until the cranberries are soft and starting to burst, about 10 minutes.
  4. Remove the saucepan from the heat. Taste the sauce and decide if its level of tartness suits you or if you’d like to add more stevia. I sometimes mix in an additional 1 teaspoon of stevia at this point (which equals ⅓ cup of sugar). Cool the sauce to room temperature before serving.

Notes

  • Use powdered sweeteners instead of granulated ones like erythritol to avoid texture issues caused by crystallization.
  • Cook the sauce until cranberries are soft but not all burst, preserving some whole berries for better texture.
  • Store the sauce in the refrigerator in an airtight container for up to four days while maintaining flavor.
  • Freezing the sauce is possible for up to three months without quality loss.
