This sweet and delicious Sugar Free Keto Custard has a velvety smooth texture with delightfully rich vanilla flavor.

Ingredients
- 1 ½ cups heavy cream
- 1 cup unsweetened canned coconut milk
- 4 egg yolks
- ⅔ cup allulose or ½ cup monk fruit
- 1 teaspoon vanilla bean paste or 2 teaspoons vanilla extract

Instructions
- Add the heavy cream and coconut milk to a saucepan and heat until small bubbles start to form around the edges, but do not boil.
- In a mixing bowl, add in the egg yolks, allulose, salt and vanilla bean paste, then whisk to combine until pale in color. Should take about 2 minutes. If using vanilla extract, wait to add until the custard has been cooked.
- Slowly whisk a ladle full of the hot cream into the egg mixture to temper the eggs.
- Slowly pour the tempered egg mixture into the saucepan, while whisking. Simmer the custard, whisking often, for about 8-10 minutes or until thickened enough to coat the back of a spoon.
- Remove from the heat and if you are using vanilla extract, whisk it into the custard.
- Pour the custard through a fine mesh sieve into a bowl. This is to help ensure a smooth texture without any lumps.
- Cover with plastic wrap, making sure it’s touching the top of the custard. This will help prevent a skin from forming.
- Chill in the fridge for at least 4 hours or overnight. Once it has thickened and set, serve with your choice of toppings. You can also serve while still warm, pouring it over brownies, cake, pie or some fresh berries.
