Sugar Snap Pea Radish Feta Salad

This sugar snap pea salad is the easy refreshing salad you'll be making all spring and summer long. Crisp snap peas diagonally chopped, thinly sliced peppery radishes, crumbled salty feta, fresh herbs, tossed in the most delicious lemony dressing. Perfect for an appetizer or side salad.

Ingredients

  • 1.5 pounds sugar snap peas (trimmed and stringed, and sliced on the diagonal)
  • 2 radishes thinly sliced on a mandoline or with knife, bunches
  • 8 oz feta cheese (crumbled or sliced into small cubes from block)
  • 3 tbsp mint roughly chopped, fresh
  • 1 tbsp dill fresh
  • 1/4 cup olive oil
  • 1 tbsp lemon juice fresh
  • 1 garlic pressed or grated, clove
  • 1 tsp red wine vinegar
  • 1/4 tsp kosher salt
  • 1/2 tsp black pepper fresh ground

Instructions

  1. Using a pairing knife to begin slicing tip off end of snap pea, there are strings on the top and the bottom of the peas, once you've almost sliced through the end you should find the string. Pull the string out. Repeat with other end of snap pea and string on opposite side.
  2. Once you have prepped the sugar snap peas, slice them diagonally. Place in a large bowl.
  3. Using a mandoline (with the guard or a safety glove) thinly slice the radishes. You can use a knife, but it is harder to get thin uniform slices. Place in large bowl with the sugar snap peas.
  4. Add feta, mint, and dill to the bowl with the peas and radishes.
  5. In a small bowl, add grated garlic, olive oil, lemon juice, red wine vinegar, salt and pepper. Whisk to combine. Pour over the peas, radishes, and feta, gently toss. Taste and adjust seasoning if necessary.
  6. Place in refrigerator until ready to serve. Best enjoyed chilled. Enjoy!

Notes

  • Both peas are tender and crisp, but sugar snap peas have a sweeter more flavorful profile.
  • Because this recipe is best served chilled, it's easy to make ahead and also store leftovers.
  • Due to the natural saltiness of feta, this recipe doesn't need a lot of additional salt
  • A good substitution if you don't have feta would be cotija cheese
