Sugared Cranberries

Sugared Cranberries are fresh cranberries coated in a lightly sweetened syrup then rolled in sugar, resulting in a crisp, tart, and sweet texture. The process involves simmering cranberries briefly in an orange juice-sugar syrup, chilling them, then coating them in granulated sugar. They make a colorful garnish or a tangy candy-like treat.

Description

The recipe starts with fresh cranberries simmered briefly in a mixture of water, orange juice, and sugar until the sugar dissolves and the berries are evenly coated. After removing the berries from the syrup and cooling on a rack, they are rolled in granulated sugar for a textured, sparkling finish. The sugar coating adds sweetness and a slight crunch contrasting the natural tartness of the cranberries.

This preparation is ideal for garnishing desserts like cakes or pancakes and works well on party trays. The berries can be eaten like a candy or used to dress up breakfast or festive meals.

Storing in the refrigerator preserves freshness for up to four days, but freezing is not recommended as it affects texture. The recipe notes nutritional information per cup and advises careful sugar division to balance sweetness.

Ingredients

Servings
  • 12 oz cranberries fresh
  • 1/4 cup orange juice
  • 1/4 cup water
  • 1/2 cup sugar divided

Instructions

  1. In a small saucepan, add water, orange juice, and 1/4 cup of the sugar. Whisk and heat on medium to bring to a gentle simmer. Let cook for 2-3 minutes, whisking to combine so that all of the sugar is dissolved.
  2. Remove pan from heat and gently add cranberries. Stir to coat all berries for about 1-2 minutes.
  3. With a slotted spoon, remove berries from syrup, gently shaking off excess, and line them in a single layer on a parchment paper lined wire rack or baking sheet.
  4. Let berries cool for 45 minutes.
  5. Meanwhile, add the remaining 1/4 cup of sugar to a small bowl. Once berries have cooled, in batches, add berries to bowl and coat in sugar. Remove and shake off excess and add coated berries to a bowl. Repeat with all berries.
  6. Store in fridge for up to 4 days.

Notes

  • Store sugared cranberries in the refrigerator for up to four days to maintain texture and freshness.
  • Freezing is not recommended as it alters the crisp coating and texture.
  • Use sugared cranberries as a garnish on desserts, pancakes, cakes, or on party platters.
  • Divide sugar evenly between the syrup and coating steps to achieve balanced sweetness.
