Description
Sukiyaki is a Japanese-style hot pot dish where thinly sliced pork loin is cooked together with vegetables and tofu in a flavorful sauce. This version uses a blend of shiitake or cremini mushrooms, enoki mushrooms, Napa cabbage, carrots, konnyaku noodles, and tofu, which add varied textures from tender cabbage to chewy noodles and soft tofu. The two-part green onion—whites and greens—contribute aromatic sharpness and freshness.
After flash freezing the pork to facilitate thin slicing, the ingredients are seared briefly to develop some caramelization before simmering in a mixture of soy sauce, sake, brown sugar, and water. This sauce imparts a balanced sweet and salty profile that permeates the meat and vegetables as they cook. The cooking time ensures the pork and carrot are fully cooked but still tender.
The dish is traditionally served over sticky white rice, allowing the sauce to flavor each bite. Sprinkle the reserved green onion greens on top at serving to add a pop of color and mild bite. This recipe works well for sharing as a warm, soothing meal.
Ingredients
For the Pork Sukiyaki:
- 1 - 1 1/2 pounds pork loin thinly sliced
- 12 ounces mushrooms shiitake or cremini
- 6 - 8 ounces enoki mushrooms trimmed
- 2 bunches green onion cut into 1" pieces, then separate whites and greens
- 1/2 head Napa cabbage roughly chopped
- 1 1/2 cup carrot cut into quarters by length, baby
- 12 ounces tofu cut into cubes, firm
- 9 ounces konnyaku noodles
- 2 tablespoons neutral cooking oil generic cooking oil
For the Sukiyaki Sauce:
- 2/3 cup soy sauce soy sauce, also known as shoyu
- 6 tablespoons sake
- 2/3 cup brown sugar
- 1 1/2 cups water
Instructions
- Flash freeze the pork for 30 minutes so it is slightly firm. This will enable you to cut it very thin, without moving around so much. Prepare all the veggies. In Japan, they like to cut little designs in the mushroom tops!
- Mix the Sukiyaki sauce in a bowl (or measuring pitcher) and set aside.
- Heat a large skillet to medium-high. Add the oil, then pile the pork, tofu, noodles, and vegetables in the skillet, reserving the onion greens for later. Sear the meat and veggies for 1-2 minutes, then flip them over and sear another 1-2 minutes.
- Add the sauce to the skillet. Allow the ingredients to cook down for 5-8 minutes, stirring occasionally until both the pork and the carrots are cooked through.
- Remove the sukiyaki and serve over sticky rice (sushi-style rice) or as is. Sprinkle with the onion greens.
Notes
- Flash freezing the pork for 30 minutes before slicing helps achieve thin, even slices for quick cooking.
- You may substitute thinly sliced beef in place of pork to create a more traditional sukiyaki.
- Serve over sticky white rice to absorb the flavorful sauce.
