Green Goddess Tahini Dressing:

  • 1/3 cup tahini well-stirred
  • ¼ cup rice vinegar
  • 3 tablespoons lemon juice fresh
  • 1/3 cup water or more if needed for blending
  • 1 clove garlic minced, large
  • ¼ teaspoon salt to taste, sea salt
  • ¼ cup chives chopped
  • 1/3 cup basil packed, fresh
  • 4 leaves sage large

Stone Fruit Buddha Bowls:

  • 3 cups brown rice
  • 5 ounces mixed greens I used a baby lettuce blend
  • 1 14- ounce black beans drained and rinsed, canned
  • 1 cup cherries pitted and halved, ripe
  • 1 pint blackberry ripe
  • 1 peach pitted and sliced, ripe
  • 1 avocado pitted and sliced
  • ½ red onion thinly sliced
  • ½ green onion chopped, bunch
  • 1/3 cup queso fresco crumbled
  • 1/3 cup pistachios chopped, shelled

Instructions

Prepare the Green Goddess Tahini Dressing:

  1. Add all of the ingredients for the dressing to a blender or food processor and blend until smooth. The dressing will be very thick - you can add more water or a splash of full-fat coconut milk to thin it out. Refrigerate until ready to use.

Prepare the Buddha Bowls:

  1. Cook the rice according to package instructions. Divide it among 4 large bowls, along with the remaining ingredients. Drizzle desired amount of green goddess dressing over each bowl and serve.
