Summer Cobb Salad

Summer Cobb Salad is filled with fresh summer fruits and veggies.  It’s loaded with grilled chicken, bacon, hard boiled eggs, avocado, goat cheese, berries, cucumber, grilled corn and tossed in a simple balsamic lime vinegar dressing. Every bite is refreshing, bright, and summery!

Ingredients

Servings

For the Salad:

  • 6 cups mixed greens spring mix or chopped romaine lettuce
  • 3 cups chicken breast sliced
  • 8 lices Bacon cooked and chopped
  • 4 egg quartered, hard-boiled
  • 1 ½ cups corn grilled, cut off the cob
  • 2 avocado about 2 cups, sliced
  • 1 cup cucumber sliced
  • 1 ½ cups fresh berries I used blackberries and raspberries
  • 4 ounces goat cheese crumbled
  • salt to taste
  • black pepper to taste, ground

Balsamic Vinaigrette

  • ½ cup extra virgin olive oil
  • ¼ cup balsamic vinegar
  • 3 tablespoons lime juice fresh
  • 1 teaspoon lime zest
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • ½ teaspoon salt
  • ¼ teaspoon basil dried
  • teaspoon black pepper ground

Instructions

  1. Add 6 cups mixed greens to a large bowl and top with 3 cups sliced chicken breast, 8 slices cooked and chopped bacon, 4 quartered hard-boiled eggs , 1 ½ cups grilled corn cut off the cobb, 2 sliced avocados , 1 cup sliced cucumbers , 1 ½ cups fresh berries, and 4 ounces crumbled goat cheese . Toss to combine. Season with salt and ground black pepper to taste.
  2. To make the vinaigrette, add ½ cup extra virgin olive oil, ¼ cup balsamic vinegar, 3 tablespoons fresh lime juice, 1 teaspoon lime zest, 1 teaspoon dijon mustard, 1 teaspoon honey, ½ teaspoon salt, ¼ teaspoon dried basil, and ⅛ teaspoon ground black pepper to a jar. Close it and shake until fully combined.
  3. Pour the desired amount of dressing over the salad and toss to combine. Add more dressing as desired.
