Ingredients
- 1 tbsp shallot minced
- 1 romaine lettuce chopped (about 5 cups, head
- 2 teaspoons Dijon mustard
- 1 corn on the cob cooked and cut off husk, medium
- 2 tbsp white wine vinegar
- 4 to 5 grape tomato quartered, large
- 6 tbsp buttermilk 1% fat
- 1/2 avocado 3 oz, sliced, large
- 2 tbsp extra virgin olive oil
- 1/4 cup red onion sliced
- 1/4 tsp garlic powder
- 1/2 teaspoon kosher salt
- pinch black pepper
Instructions
- *Quickest way to cook the corn is put it in microwave 3 minutes with husk on, then let cool and peel.
- Whisk all the dressing ingredients together.
- Place lettuce in a large bowl, top with corn, tomatoes, avocado and red onion and drizzle with dressing.
