Summer Honey Chipotle Chicken Quesadillas
Description
This recipe layers a spicy-sweet shredded chicken filling seasoned with chipotle chili powder, adobo peppers, garlic powder, honey, salt, and pepper. The addition of fresh corn kernels and sweet pepper slices provides pops of sweetness and crunch. The combo of sharp cheddar and Monterey Jack cheese melts inside flour tortillas, creating a binder for the ingredients and a rich, creamy texture. Cooking the quesadillas in olive oil or butter on medium-low heat ensures a golden, crispy exterior and melted interior without burning.
The quesadillas are served topped with tangy pickled onions and crumbly cotija cheese, along with shredded lettuce and fresh cilantro for lightness. Ranch dressing adds a cooling contrast that complements the smoky chipotle heat. This dish suits casual lunches, dinners, or snacks, offering a balance of heat, sweetness, and creaminess.

Instructions
- In a bowl, combine the chicken, chili powder, chipotles in adobo (this makes it hot!) honey, a big pinch of salt and pepper and garlic powder.
- Heat olive oil or butter in a skillet over medium-low heat. To make the quesadillas, place a sprinkling of cheese on a tortilla, then some of the chicken mixture, some of the corn and peppers and top with another sprinkling of cheese. Top with another tortilla!
- Cook the quesadilla on both sides until golden and crispy. Serve with shredded lettuce, pickled onions, salsa ranch or anything else you love!
