Ingredients

- 2 cups quinoa cooked and cooled
- 1 cup cucumber chopped, Persian or English
- 1 cup cherry tomato chopped
- 1 cup chickpeas drained and rinsed, canned
- 3/4 cup corn fresh or frozen and defrosted
- 3 tablespoons basil chopped, fresh
- kosher salt fresh ground, to taste
- black pepper fresh ground, to taste
Lemon Vinaigrette
- 1/3 cup lemon juice fresh
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon honey

Instructions
- Combine all of the ingredients for the salad in a large serving bowl.
- In a small jar add all of the ingredients for the vinaigrette. Cover with the lid and shake until well combined. Pour the vinaigrette over the salad and stir until everything is coated. Taste for seasoning. Serve immediately or cover and refrigerate until ready to serve.
