Summer Stone Fruit Salad

I love finding new ways to eat up my stone fruit before it goes bad - this summer salad uses all the best summer produce!

Ingredients

  • 4 heirloom tomatoes cored and cut into wedges, large
  • 1 cup cherry tomatoes heirloom variety
  • 2 yellow peach cut into wedges, ripe but firm
  • 2 white nectarine cut into wedges, ripe but firm
  • ½ red onion thinly sliced, small
  • cup feta cheese crumbled
  • basil fresh leaves
  • mint leaf fresh
  • salt kosher salt and freshly cracked
  • black pepper kosher salt and freshly cracked

Lemon Champagne Vinaigrette below

  • 1 lemon juiced
  • 3 teaspoons champagne vinegar
  • 2 cloves garlic finely chopped
  • 1 shallot finely chopped
  • cup olive oil
  • salt Kosher salt and freshly cracked, to taste
  • black pepper Kosher salt and freshly cracked, to taste

Instructions

  1. Arrange the tomatoes, stone fruit and red onions on a large platter or bowl. Top with basil, mint, feta and salt and pepper. Toss with Lemon Champagne Vinaigrette
  2. For the Lemon Champagne Vinaigrette - combine all ingredients together in a bowl and whisk. Season with salt and pepper as needed.
