SunButter Energy Bites
Description
SunButter Energy Bites bring together rolled oats, seed-based ingredients, and a mix of raisins and chocolate chips for texture and natural sweetness. Sunflower seed butter acts as a creamy binder, complemented by a touch of maple syrup to enhance the mild sweetness. The combination of flaxseed and chia seeds adds a slight crunch and nutritional texture. Mixing and rolling the ingredients into small balls creates snack-sized portions that hold their shape well when chilled or frozen.
The preparation involves mixing all dry ingredients first, then adding the sunflower seed butter and maple syrup to bind the mixture thoroughly. Rolling the mixture by hand or with a spoon yields about 11-12 bites. These bites are convenient to store and enjoy as needed.
They offer a no-bake, portable snack option useful for quick energy between meals or as a light treat. Variations in the recipe allow for changing dried fruits or seed butters depending on personal preference or dietary needs, making them adaptable for different tastes and restrictions.
Ingredients
- ½ cup rolled oats old fashioned
- 1 Tablespoon Flaxseed
- 1 Tablespoon chia seeds or hemp seeds
- 2 Tablespoons raisins
- 2 Tablespoons chocolate chips
- pinch of sea salt
- ½ cup sunflower seed butter
- 1 Tablespoon maple syrup
Instructions
- In a large bowl, mix together oats, chia seeds, flaxseed, raisins, chocolate chips and sea salt. Add sunbutter and maple syrup and mix everything together.
- Using a spoon (or your hands) combine the mixture thoroughly and roll into small balls. You should be able to make around 11-12.
- Store in the fridge for up to 1-2 weeks or in the freezer for up to 3 months.
Notes
- Dried fruit can be swapped; cherries, cranberries, or dates work well instead of raisins.
- Chocolate chips are optional and can be replaced with more dried fruit if preferred.
- Tahini or other nut butters can substitute sunflower seed butter if nut-free options aren't needed.
- Maple syrup can be omitted or replaced with honey or agave syrup according to taste or dietary choice.
