Sunday Pork Roast
Description
The Sunday Pork Roast recipe uses a 3 to 5-pound boneless pork butt rubbed with spices including garlic powder, onion powder, paprika, salt, and black pepper. The high-temperature initial roast seals in juices and forms a browned crust. After lowering the oven temperature, vegetables are added around the meat along with apple juice and fresh rosemary, which helps impart a subtle aromatic sweetness. The long cooking time makes the pork tender enough to shred and the vegetables soft but intact.
The pork roast develops a robust flavor from the seasoning and roasting process, while the apple juice subtly tenderizes the root vegetables and adds moisture. This dish serves well as a main course for a comforting weekend meal with hearty vegetables absorbing the pork drippings.
A slow cooker adaptation is also provided, allowing the same ingredients and seasonings to cook together over eight hours on low heat, offering convenience with similar results.
Ingredients
Pork Roast
- 3 to 5 pounds pork butt roast boneless
- 2 tablespoons vegetable oil
- 2 teaspoons salt
- 2 teaspoons black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
Vegetables
- 2 large white onion cut into 2 inch chunks
- 1 pound carrot baby
- 1 1/2 pounds potato red, baby
- 2 cups apple juice
- 1 prig rosemary fresh
Instructions
- Preheat oven to 450 degrees.
- Rub a 3 to 5 pounds boneless pork butt roast with 2 tablespoons vegetable oil. In a small bowl, stir together 2 teaspoons salt, 2 teaspoons black pepper, 1 teaspoon garlic powder, 1 teaspoon onion powder, and 1 teaspoon paprika. Sprinkle seasoning mixture onto pork roast. Place fatty side up in a roasting pan or large cast iron dutch oven.
- Roast, uncovered, in the 450 degree oven for 30 to 45 minutes. Reduce the oven temperature to 350 degrees and continue cooking an additional 1 hour.
- Remove roast from oven and place the onion chunks, carrots, and potatoes around the meat. Pour 2 cups apple juice over vegetables. Place 1 sprig fresh rosemary on top.
- Cook an additional 1 to 1 1/2 hours, uncovered, or until vegetables are tender and meat shreds easily with a fork. Season vegetables with additional salt and pepper to taste and serve hot.
Notes
- For a convenient alternative, cook the seasoned pork roast with all vegetables and liquids in a slow cooker on low for 8 hours.
