Description
This salad uses lemon gelatin dissolved in boiling water mixed with pineapple juice diluted with lemon juice and water to create a flavored gelatin base. After the mixture thickens slightly, crushed pineapple (drained), freshly grated carrots, chopped pecans, and a pinch of salt are stirred in evenly. The combination gels firmly after chilling for several hours or overnight. The salad sets into a sliceable form with bright citrus and pineapple flavor brightened by the tart lemon and balanced by the sweetness and texture of the pineapple chunks and crunchy carrots and pecans.
Serving can include a small dollop of mayonnaise on each square to add a creamy contrast. The salad should be stirred well when adding the mix-ins to ensure even ingredient distribution. It needs at least several hours chilled to set properly and can be stored in the refrigerator covered for up to five days, maintaining its texture and freshness.
Ingredients
- 3 ounces lemon gelatin mix
- 1 cup water boiling
- 8 ounces pineapple canned, crushed
- 2 tablespoons lemon juice
- 3 carrot grated, medium
- ½ cup pecans chopped
- dash salt
- mayonnaise optional
Instructions
- Drain the pineapple, reserving the juice. Set the pineapple aside for now.
- To the reserved pineapple juice, add the lemon juice and enough cold water to equal one cup.
- Dissolve the jello with boiling water.
- Stir the pineapple juice mixture into the dissolved jello.
- Pour the jello into a mold or a small square baking dish.
- Place it in the refrigerator and chill until it begins to thicken (about 45 minutes to 1 hour).
- Add the reserved pineapple, shredded carrots, pecans and salt. Stir very well to combine the ingredients.
- Pour into a mold and chill until set (4 hours or overnight).
- To serve, cut into squares and top with a small dollop of mayonnaise (if desired).
