Super Crispy Panko-Breaded Onion Rings

These crunchy onion rings feature a light, airy batter made from a mix of flour, cornstarch, and instant mashed potato flakes, then coated generously with panko breadcrumbs. The batter includes cayenne pepper for subtle heat and uses cold club soda to create a crisp texture when fried. The recipe calls for frying the onion rings in hot oil until golden brown, resulting in a crispy exterior that contrasts well with the sweet softness of the onion inside. Seasoned with salt while hot, these onion rings make a crunchy, flavorful snack or side dish.

Description

Super Crispy Panko-Breaded Onion Rings combine a specialized batter blend with cold club soda and panko breadcrumbs to achieve a notably crunchy coating. The flour and cornstarch mixture is enhanced with mashed potato flakes which help add crispness, while cayenne pepper adds a mild spicy note. Onions sliced about 1/4 inch thick are dipped into the batter, then coated fully with panko before being deep-fried at 350°F until golden. The frying process forms a crunchy crust that holds up well, while the inside remains tender and sweet. After frying, the onion rings are drained on racks or paper towels and sprinkled with salt for balanced flavor.

This preparation works well as a stand-alone appetizer or snack. The crisp texture complements burgers or sandwiches, adding a crunchy contrast. Using neutral oil and a deep-fry thermometer helps maintain a stable frying temperature, which is key for even cooking and optimal crispness.

Ingredients

Servings
  • 1/2 /2 c all-purpose flour
  • 1/4 /4 c cornstarch
  • 2 tbsp mashed potato flakes instant
  • 1/8 /8 tsp cayenne pepper
  • 1/4 /4 tsp salt
  • 1 c club soda cold
  • 2-3 c panko breadcrumbs I kept needing to add more
  • 1 onion or 2 medium onions, cut into rings, large
  • neutral cooking oil

Recommended Tools

  • deep-fry thermometer
  • wire cooling racks

Instructions

  1. Cut onions into rings. 1/4" works well, but you can go slightly thicker.
  2. Combine flour, cornstarch, potato flakes, cayenne, and salt in a pan.
  3. Add club soda and mix until dissolved. Don't worry about over-mixing, but don't spend forever trying to making it completely smooth. Prep a second pan with panko breadcrumbs with one fork for each pan and heat about ~1" of oil in a pot to 350F.
  4. Dip a ring into the batter and make sure rings are completely covered inside and out, the drop into the pan of breadcrumbs.
  5. Now use the dry fork to cover the ring completely, and then repeat with the remaining rings.
  6. Fry the rings in 350F, working in batches. About 2-3 minutes per batch until golden brown.
  7. Remove from the oil to a rack or a bed of paper towels and season with some salt while hot.
