Super Easy Cauliflower Vegetable Soup

This cauliflower vegetable soup blends frozen cauliflower and mixed vegetables with diced tomatoes and vegetable broth to create a chunky, warming soup. Italian seasoning and garlic contribute an aromatic base. Chickpeas add protein, and optional parsley and Parmesan offer garnish and flavor contrast. The soup is cooked on the stovetop until the vegetables are tender, making it a filling plant-based option for a simple meal.

Description

The Super Easy Cauliflower Vegetable Soup uses frozen cauliflower and frozen mixed vegetables combined with diced tomatoes and vegetable broth for a straightforward vegetable-packed soup. The base includes sautéed onion and garlic to build flavor, enhanced with Italian seasoning, salt, and pepper. This gentle simmer until the vegetables reach the desired tenderness keeps the soup hearty yet light.

Chickpeas are stirred in near the end for added texture and protein, while fresh parsley and grated Parmesan cheese serve as optional toppings for fresh herbal and savory notes. The soup's texture is chunky and thick, thanks to the variety of vegetables and tomatoes.

This soup suits those seeking a vegetable-rich, meatless option that warms and satiates without complex preparation or ingredients. It is comforting and easily adjustable to preferences.
