Super Easy Cinnamon Coffee Cake

The Super Easy Cinnamon Coffee Cake uses a yellow cake mix combined with buttermilk, eggs, and oil for a moist, tender cake. Layers of cinnamon sugar sprinkled mid-way and on top create a sweet, spicy swirl, enhanced by grated cold butter shreds that bake into a slightly crisp topping. This cake offers a convenient and flavorful treat ideal for breakfast or dessert.

Description

This coffee cake recipe simplifies preparation by starting with a classic yellow cake mix whisked together with eggs, buttermilk, and vegetable oil. The batter maintains slight lumps for moisture retention. A cinnamon sugar mixture is evenly sprinkled between two layers of batter in a greased and floured 9x12 pan.

Butter is grated directly over the top layer, adding a rich, flaky finish after baking at 350°F for about 23 to 25 minutes. The finished cake balances soft crumb and cinnamon-spiced sweetness with buttery texture on top.

This cake fits well with morning coffee or as a quick dessert. Baking until a toothpick comes out clean ensures the center is fully cooked. Using cold butter grated over the top enhances textural contrast after baking.
