- In a large mixing bowl, use a large spoon to stir together 1 cup all-purpose flour, 1/2 cup whole wheat flour, 1/2 teaspoon salt, 1/2 teaspoon baking soda, 1/2 teaspoon baking powder, and 2 teaspoons ground cinnamon.
- Pour in 1/2 cup unsweetened applesauce, 1 cup honey, 1 large egg, and 1 teaspoon vanilla extract and stir until combined.
- Use a rubber spatula to fold in 1 cup grated zucchini, scraping the sides and bottom of the bowl as you fold so that everything gets mixed in and the zucchini gets dispersed throughout the batter. Transfer to the prepared pan.
