Description

Superfood Energy Bars blend uncooked quinoa, sunflower seeds, pumpkin seeds, sliced almonds, chopped Medjool dates, raisins, and chocolate chips with honey and melted coconut oil. The combination of seeds and nuts delivers crunch, while dried fruits contribute natural sweetness and chewiness. The coconut oil and honey act as binding agents.

Baking the mixture at moderate temperature for about 20-25 minutes helps it set while maintaining a soft interior. Cooling at room temperature followed by refrigeration solidifies the bars, facilitating clean cuts. The final bars balance textures with the sweet and savory notes from chocolate and seeds.

Ingredients

  • ½ cup quinoa uncooked
  • ½ cup sunflower seeds raw or roasted and unsalted
  • ½ cup pumpkin seeds raw or roasted and unsalted
  • ½ cup almonds raw, sliced
  • ½ cup Medjool dates chopped (about 5-6 dates)
  • cup raisins
  • cup chocolate chips
  • cup honey
  • 1 tablespoon coconut oil

Instructions

  1. Preheat oven to 350 degrees F
  2. Line a small glass baking dish with parchment paper.
  3. Combine all the dry ingredients in a medium sized mixing bowl.
  4. Melt the coconut oil in a microwave safe dish for about 1 minute and then stir in the honey.
  5. Add the wet ingredients to the dry ingredients and mix until thoroughly coated.
  6. Press the mixture into the prepared 8 x 8 - Glass Baking Dish .
  7. Bake for 20 - 25 minutes.
  8. Remove from oven and let cool.
  9. Once completely cooled to room temperature place the dish in the refrigerator for 30 minutes. This makes cutting them into bars much easier.
  10. Store in an air tight container in the refrigerator.
