Surf and Turf
Description
The Surf and Turf recipe starts by heating olive oil in a pan to sear the seasoned steak, cooked about 5-7 minutes per side to the desired doneness. The steak is then rested under foil to retain juices. The pan is refreshed and olive oil is added again for the shrimp, which cook until pink and opaque in minutes.
Once shrimp are removed, butter is melted, garlic sautéed briefly, and fresh parsley stirred in to form a flavorful sauce. The steak is returned to the pan, and shrimp are arranged on top, finishing with spooned garlic butter and an extra parsley sprinkle.
This dish offers a combination of a caramelized, juicy steak with tender shrimp enhanced by a buttery, garlicky sauce. It suits a special occasion or when variety on the plate is desired. Cooking in batches if necessary and maintaining pan heat are recommended for best sear and flavor.
Ingredients
- 2 tablespoons olive oil divided use
- 1 1/2 pounds steak such as New York strip steak
- 1/2 pound Shrimp peeled and deveined, leave tails on for a nicer presentation, jumbo
- 6 tablespoons butter
- 1 teaspoon garlic minced
- 2 tablespoons parsley divided use, chopped
- salt to taste
- black pepper to taste
Instructions
- Heat one tablespoon of olive oil over high heat in a large pan. Season the steak and shrimp with salt and pepper to taste.
- Place the steak in the pan. Cook undisturbed for 5-7 minutes per side, or until desired level of doneness is achieved. I recommend using a meat thermometer to monitor the temperature of your steak.
- Remove the steak from the pan and cover with foil to keep warm.
- Wipe out the pan with a paper towel. Add the remaining tablespoon of oil to the pan.
- Add the shrimp and cook for 3-4 minute or until pink and opaque.
- Remove the shrimp from the pan. Reduce the heat to medium.
- Melt the butter in the pan. Add the garlic and cook for 30 seconds. Stir in 1 tablespoon of the parsley.
- Place the steaks back in the pan. Arrange the shrimp on top of the steaks.
- Spoon the garlic butter sauce over the steak and shrimp. Sprinkle with remaining tablespoon of parsley, then serve.
Notes
- Ensure the pan is very hot before adding steak to get a good sear instead of steaming the meat.
- Cook steak and shrimp in batches if needed to avoid overcrowding the pan.
- Use a meat thermometer to check steak doneness precisely.
