Swedish Meatballs

For the Swedish Meatballs:

  • 2 Tablespoons olive oil
  • 1 ½ pounds ground beef
  • ¾ cup Italian-style breadcrumbs
  • 1 Tablespoon dried parsley flakes
  • 1 teaspoon garlic minced
  • ½ cup onion finely minced
  • 1 egg beaten
  • 1 teaspoon salt
  • ¼ teaspoon black pepper ground

For the Gravy:

  • ½ cup butter
  • ½ cup all-purpose flour
  • 4 cups beef broth low-sodium
  • ½ cup sour cream
  • ¼ teaspoon black pepper ground
  • ½ teaspoon salt
  • ½ cup heavy cream

Instructions

For the Swedish Meatballs:

  1. In a large bowl, combine ground beef, bread crumbs, parsley flakes, minced garlic, minced onion, egg, salt and pepper.
  2. Stir mixture with a wooden spoon until well combined. Use clean hands to roll the mixture into meatballs about 1 ½ inches in size (it should make about 20-24 meatballs).
  3. Put the olive oil into a skillet. Add meatballs, in batches, and cook until all sides are browned, about 4-5 minutes. Transfer to a paper towel-lined plate.
  4. Drain the excess grease out of the skillet.

For the Gravy:

  1. Melt butter in the skillet. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in beef broth and cook, stirring constantly, until slightly thickened, about 1-2 minutes.
  2. Stir in sour cream, heavy cream, salt and pepper Stir in meatballs and cook, stirring occasionally, until heated through and thickened, about 8-10 minutes.
  3. Serve immediately. We recommend serving them with egg noodles, mashed potatoes or rice.

Notes

  • FRIDGE: Transfer leftovers to an airtight container and store in the fridge for up to 3 days.
  • FREEZER: Place fully cooled meatballs onto a baking sheet. Then place them in the freezer for about 2 hours. Once frozen, transfer to an airtight container or freezer bag and freeze for up to 3 months.
  • To reheat, add some cook time to frozen meatballs and pop refrigerated meatballs into a skillet or the microwave.
