Sweet and salty peanut butter granola bars

These granola bars combine rolled oats, Rice Krispies, and salted peanuts bound together with a warm peanut butter and honey mix, pressed and chilled to firm up. A coating of white chocolate and peanut butter adds a sweet glaze, balancing the saltiness of the nuts. Freezing before cutting helps the bars hold their shape. The result is a chewy and crunchy snack bar with contrasting textures and sweet-salty flavor notes.

Description

Sweet and salty peanut butter granola bars start with dry ingredients of rolled oats, puffed rice cereal, and salted peanuts. The peanut butter and honey are gently warmed to achieve a pourable consistency that binds the dry mix. Pressing this combination firmly into a pan and freezing it sets the bars before cutting. The top is dipped in a melted mixture of white chocolate and peanut butter for a sweet, smooth finish that complements the saltiness.

The bars offer a texture contrast between the chewy oats and crispy puffed rice, with crunch provided by the peanuts. This blend of flavors and textures creates a balanced snack bar suitable for packing on the go. Storing them frozen maintains firmness, while wrapping individually can help with portion control and freshness.

If a microwave is unavailable for warming the peanut butter and honey, gently heating in a bowl over simmering water can achieve the same effect cautiously without overheating.

Ingredients

Servings

For the bars

  • cups rolled oats
  • 1 cup Rice Krispies
  • ½ cup peanuts salted
  • 1 cup peanut butter (smooth - almond butter works too)
  • ½ cup honey

For the coating

  • ounces white chocolate
  • 1 tablespoon peanut butter smooth

Instructions

  1. Combine the rolled oats, rice Krispies and peanuts in a bowl.
  2. Heat the peanut butter and honey together slightly in a smaller bowl (I did this by microwaving for 20 or 30 seconds*).
  3. Pour the peanut butter and honey mixture over the oats and peanuts, and mix until the dry ingredients are well combined.
  4. Press into a 9 x 9 inch (or similar) tin or dish (press down and right into the corners!), then freeze for around 30 minutes before cutting into about 10 bars.
  5. Melt the white chocolate and peanut butter together in a small(ish) flat bowl or dish, then dip the top side of each bar into it. Place the bars non-coated-side-down to set.
  6. If you like, wrap bars individually in baking or greaseproof paper and freeze until ready to eat.

Notes

  • If you don't have a microwave, gently warm peanut butter and honey over simmering water to combine smoothly without overheating.
  • Press bars firmly into the pan and freeze before cutting to ensure they hold together.
  • Wrap bars individually for convenient serving and freeze to maintain texture.
