These Sweet and Sour Baked Chicken Wings are seasoned simply before baking to a crispy finish and then tossed in a homemade thick sauce combining garlic, pomegranate molasses, soy sauce, teriyaki, brown sugar, honey, ketchup, and barbecue sauce. The final wings are savory, tangy, and sticky with a balance of sweet and sour flavors.

Description

The wings are washed, dried thoroughly, and seasoned with salt and pepper before baking on a rack at 400°F to allow even cooking and crisping of the skin. After 30 minutes total cooking time with a flip halfway, the wings develop a golden exterior.

The secret sauce is made by sautéing minced garlic in olive oil, then simmering a mixture including pomegranate molasses, soy sauce, teriyaki sauce, brown sugar, honey, ketchup, barbecue sauce, cornstarch, and water. The cornstarch slurry helps thicken the sauce to a glossy, sticky consistency that clings well to the wings.

Once baked, the wings are tossed in this sauce to coat completely, then garnished with green onions and sesame seeds for a fresh crunch and toasted note. This method allows baking instead of frying, while still achieving a flavorful coating with balanced sweet, sour, and savory tones.

Wings:

  • 12 chicken wings wingettes and drumettes
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Secret Sauce:

  • 1 tbsp olive oil
  • 2 garlic minced, cloves
  • 2 tbsp pomegranate molasses
  • 1/4 cup soy sauce
  • 3 tbsp teriyaki sauce
  • 3 tbsp brown sugar
  • 1 tbsp honey
  • 1 tbsp ketchup
  • 2 tbsp barbecue sauce
  • 1 1/2 tsp corn starch
  • 3/4 cup water

Instructions

Wings:

  1. Preheat the oven too 400F. Line a baking sheet with aluminum foil and place a rack on it, coat the rack with non-stick spray.*
  2. Wash the wings, pat dry them so they are completely dry.
  3. Season both sides with salt and pepper, place the wings on the rack.
  4. Bake in the oven for 15 minutes.
  5. Flip the wings and cook for another 15 minutes.**
  6. Toss the wings in a bowl with the secret sauce.
  7. Garnish with some green onions and sesame seeds.
  8. Serve hot.

Secret sauce:

  1. Mix cornstarch and water in a small bowl.
  2. Heat oil in a sauce pan over medium heat.
  3. Saute garlic for one minute.
  4. Add the rest of the ingredients + cornstarch and water to the saute garlic.
  5. Cook for 10-15 minutes until the sauce thickens.
  6. Taste and adjust to your preference. (more soy sauce for saltiness, more brown sugar for sweetness and more pomegranate molasses for sourness)

Notes

  • Baking wings on a rack allows even cooking and crispier skin; if unavailable, bake directly on foil-lined pan coated with non-stick spray.
  • Cooking time remains the same even if you increase wing quantities.
  • Adjust soy sauce, brown sugar, and pomegranate molasses in the sauce to balance saltiness, sweetness, and sourness as desired.
