Sweet and Sour Cucumber Noodles

Sweet and Sour Cucumber Noodles transform crisp English cucumber into tangy, refreshing spiralized noodles dressed in a blend of citrus, rice vinegar, honey, and garlic. Fresh herbs and sesame seeds enhance the flavor and texture, making it a light and vibrant salad or side. The dish can be customized with toppings and served at room temperature for best taste.

Description

The preparation begins by spiralizing a large English cucumber into noodle-like strands. A dressing made from lemon or lime juice, olive oil, rice vinegar, garlic (both fresh and powder), honey, diced cilantro, and seasonings is whisked together and poured over the cucumber noodles.

After allowing the cucumber to sit in the dressing, flavors meld and the noodles absorb tangy and sweet notes. Toasted sesame seeds and chia seeds are sprinkled on top before serving, with optional green onion or nuts for an added texture and flavor contrast.

This salad highlights the refreshing and hydrating qualities of cucumber while balancing sweet, sour, and savory spices. It’s flexible in terms of toppings and works well as a side dish or light snack. Serving at room temperature maximizes the flavor profile, but chilling is also an option.

Ingredients

Servings
  • 3 TBSP lemon juice or lime juice, fresh
  • 3 TBSP extra virgin olive oil
  • 2 TBSP rice vinegar
  • ¼ tsp salt plus extra, to taste
  • tsp dill (fresh or dried)
  • tsp garlic powder
  • ½ tsp garlic fresh, minced
  • 1/4-1/2 cup cilantro plus extra to garnish, fresh, chopped
  • 2 TBSP honey
  • 1 English cucumber large
  • toasted sesame seeds for topping
  • chia seeds for topping
  • green onion for topping (optional, chopped

Instructions

  1. Grab a giant English cucumber, a spiral slicer/veggie peeler, and go nuts! Spiralize the cucumber into "noodles" using the spiral slicer.
  2. Whisk everything but the cucumber and sesame seeds together and pour over noodles.
  3. Let them sit at room temperature to soak up all the yummy dressing or pop it in the fridge for later.
  4. Before serving, sprinkle with toasted sesame seeds and/or chia seeds and optional (but tasty!) garnish chopped green onion.
  5. Crushed peanuts or cashews are great as a topping here too! It's ridiculously easy to customize based on what you have available as well as what you prefer taste/topping-wise.
  6. Serve at room temperature for maximum flavor.
