Description
The recipe features ramps, or alternatively pearl onions, that are cleaned and sautéed in olive oil until browned, developing a lightly caramelized flavor. When using pearl onions, a prior boiling step softens them before sautéing.
After browning, a mixture of honey and white wine or sherry vinegar is added, then simmered until reduced to a glaze that coats the ramps. This cooking process yields a tender vegetable with a shiny, sweet and sour finish, complemented by a satin texture.
Sweet and Sour Ramps can be served hot or at room temperature, garnished with fresh black pepper to add a sharp contrast to the sweetness and acidity. Their flavor and texture make them suitable as a side dish or accompaniment to meats and other spring vegetables.
Ingredients
- 1/2 pound ramp or pearl onions, about a dozen
- salt
- 3 tablespoons olive oil
- 3 tablespoons white wine or sherry vinegar
- 3 tablespoons honey light-colored
- black pepper for garnish
Instructions
- Clean the ramps or pearl onions and remove the leaves or green parts; use them for another recipe.
- If you are using pearl onions, boil them for 5 minutes in very salty water before proceeding. This softens them.
- Saute the ramps in the olive oil over medium-high heat until they brown, about 5 minutes.
- Add honey and vinegar and swirl to combine in the pan. Turn the heat down and simmer until the liquid reduces to a glaze, about another 6 to 8 minutes.
- Serve hot or at room temperature with some fresh black pepper.
