Sweet and Sour Sauce
Description
This Sweet and Sour Sauce combines 100% pineapple juice with brown sugar, soy sauce, vinegar, ketchup, and a pinch of salt to achieve a harmonious balance of tartness and sweetness. The ingredients are simmered gently to melt the sugar and meld flavors. To thicken the sauce, a cornstarch slurry—cornstarch mixed with water—is gradually stirred in as the sauce simmers, giving it a glossy, smooth texture.
The recipe adjusts thickness based on intended use: two tablespoons of cornstarch for a dipping sauce consistency and three tablespoons for thicker sauce suitable for sweet and sour pork dishes. This flexibility allows the sauce’s texture to complement the dish it accompanies.
Using 100% pure pineapple juice ensures the right acidity and flavor; however, sweetness can be adjusted by adding more sugar if required, depending on the brand. Simple to prepare on the stovetop with gentle stirring, this sauce is ready to be enjoyed paired with protein or as a flavorful dip.
Ingredients
- 1 cup pineapple juice 100%
- 2 tablespoons soy sauce
- 2 tablespoons vinegar
- ¾ cup brown sugar
- 3 tablespoons ketchup
- ¼ teaspoon salt
THICKEN SAUCE:
- 2 tablespoons cornstarch (For dipping sauce use 2 tablespoons, for sweet and sour pork dish use 3 tablespoons)
- 2 tablespoons water
Instructions
- Pour 1 cup of 100% pineapple juice into the pot.
- After, put ¾ cup of brown sugar, 2 tablespoons of soy sauce, 2 tablespoons of vinegar, 3 tablespoons of ketchup, ¼ teaspoon of salt. Stir and mix it well.
- Then, turn on small and low fire. Let it simmer for a few minutes until the sugar is melted.
- In a small container, add 2 tablespoons of cornstarch, 2 tablespoons of water and mix it well. (For dipping sauce, I like to use 2 tablespoons of cornstarch. However, when I make a sweet and sour pork dish, I like the sauce thicker. Therefore, I use 3 tablespoons of cornstarch to thicken the sauce.)
- Next, slowly pour the cornstarch mixture into the sauce and keep stirring when pouring the mixture until the sauce is thickened.
Notes
- Use 100% pineapple juice for best flavor; adjust sugar quantity if needed based on juice sweetness.
- Adjust cornstarch quantity depending on desired sauce thickness: less for dipping sauce, more for cooking.
- Simmer gently on low heat, stirring continuously to prevent burning and ensure sugar dissolves fully.
