Sweet and Sour Sauce Recipe

This Sweet and Sour Sauce blends ketchup, vinegar, brown and white sugars, and soy sauce to create a tangy and sweet condiment. Thickened with cornstarch, it has a smooth and glossy texture that clings well to meats or vegetables. The option to use pineapple juice adds a subtle fruitiness, enhancing the sauce's complexity. This versatile sauce is suitable for stir-fries, dipping, or glazing dishes where a balance of sweet and acidic flavors is desired.

Description

The Sweet and Sour Sauce Recipe combines ketchup, soy sauce, white vinegar, brown sugar, and granulated sugar to craft a balanced flavor profile. Adding cornstarch blended in cold water or pineapple juice creates a thick consistency after simmering, giving the sauce a glossy finish. Cooking the mixture to a boil and then simmering until thickened ensures the sugars dissolve fully, melding the flavors. The choice of cornstarch quantity affects the thickness, with more resulting in a denser sauce suitable for glazing or dipping.

This sauce complements a range of dishes, particularly Asian-inspired recipes, lending a pleasant sweet and tangy note to fried or grilled proteins and cooked vegetables. The blend of acidity from vinegar and sweetness from sugars provides a bright contrast in flavor.

The recipe offers flexibility by allowing pineapple juice to replace part of the water for a sweeter and fruity undertone. Adjusting the amount of sugars lets you tailor the sweetness to your preference.

Ingredients

Servings
  • 1/2 cup ketchup
  • 1 tsp soy sauce
  • 1/3 cup white vinegar
  • 1/2 cup brown sugar packed (can reduce to 1/3 cup)
  • 1 cup granulated sugar for less sweet taste, reduce a few Tbsp
  • 3/4 cup water or half pineapple juice and half water, cold
  • 4 to 5 Tbsp cornstarch (5 Tbsp makes a pretty thick sauce)

Instructions

  1. In a saucepan, combine 1/2 cup ketchup, 1 tsp soy sauce, 1/3 cup vinegar, 1/2 cup brown sugar and 1 cup white sugar until combined.
  2. In a separate cup, whisk 3/4 cup cold water (or pineapple juice) with 4 Tbsp cornstarch until well blended. Whisk vigorously into the ketchup mixture. Bring to a boil while whisking until bubbly, then reduce heat to low and simmer until thickened, remove from heat. Keep in mind, the sauce will get thicker when cooled.
