Description
This Sweet and Spicy Chicken recipe features boneless chicken breasts slow-cooked in a fragrant sauce of white wine, fresh orange juice, orange marmalade, and finely chopped yellow and sliced red onions. Seasoned with rosemary, red pepper flakes, and five spice powder, the chicken absorbs a mix of sweet and gently spicy notes. After cooking, the chicken and onions are removed, and the cooking liquid is thickened with arrowroot starch to create a glossy sauce. Ingredients
- ¾ cups white wine
- ⅔ cups orange juice from 2 large oranges, fresh
- ⅓ cup orange marmalade
- 1 yellow onion finely chopped, medium
- 1 red onion sliced, medium
- 1 teaspoon rosemary
- ½ teaspoon red pepper flakes
- 3 lbs chicken breast boneless
- 2 teaspoon five spice powder
- sea salt to taste, Celtic
- black pepper to taste, Celtic
- 7 clementines
- 1 ½ Tablespoon arrowroot starch
- pomegranate arils optional, or sliced green onions
Instructions
- Combine the first six ingredients in a slow cooker.
- Cut the chicken breasts in slices, and season with five spice powder, salt and pepper.
- Place chicken slices in the slow cooker and stir the chicken a little bit so it is covered with the sauce and onions. Top with clementines, cover and cook at LOW for 4 hours.
- Remove chicken and onions from slow cooker. Pour liquid in a medium saucepan, reserving about 1/4 cup. Mix reserved liquid with 1 1/2 Tbsp arrowroot starch, until smooth. Return to the orange mixture in the saucepan and bring to a boil. Boil, stirring constantly, 1 minute or until sauce thickens.
- Serve sauce over chicken, sprinkle with pomegranates or green onions, if desired.
